Puri Egg Potato Curry - Tamil

This perfect recipe to try at any time of the day with excellent potato and egg combination curry to serve with puris.


METHOD

For Preparation of Curry:

Cook eggs in boiling water for about 8 minutes, remove the outer layer and keep aside.

Heat oil in a pan, add mustard seeds, cumin seeds, dry red chilies, sliced onion, curry leaves, turmeric powder, saute onions till light transparent in color.

After that put chopped tomatoes, season this with coriander powder, red chili powder, salt along with water (as required) and coriander leaves, let it boil.

When tomatoes mashed, flavour with chopped mint leaves, boiled and mashed potato, pinch of garam masala powder, boiled eggs (cut into 2 halves), cook this again till the preferred consistency.

For preparation of Puri:

Make a thick dough by using wheat flour, salt (to taste) and water (as required), 1/2 teaspoons of oil.

Later divide to small portions, roll it to small roti (like puris) and deep fry in hot oil.
